Working Principle of Steam Sterilization Retort
The steam sterilization retort is equipment that performs sterilization treatment on food products using high-temperature steam. It is widely applied in the high-temperature sterilization of all kinds of flexible and rigid canned foods to extend their shelf life. The working principle of the steam sterilization retort is to generate steam by heating water, and then sterilize food products with high-pressure steam. The specific process includes heating to generate steam inside the retort, then controlling the pressure through a pressure gauge to ensure the steam circulates in the airtight retort chamber, thus achieving a thorough sterilization effect.
Main Advantages of the Steam Sterilization Retort
The main advantages of the steam sterilization retort include efficient and uniform sterilization effect, capability to extend the ambient-temperature shelf life of products, and retention of the original taste, texture and color of the products. Meanwhile, it is energy-saving, environmentally friendly and easy to operate. Compared with other sterilization methods, the steam sterilization retort has prominent advantages in energy consumption. In addition, it has a high degree of automation, which reduces the labor intensity of workers and improves production efficiency.
Equipment Features
The steam circulation fan sterilization retort adopts a direct heating mode, where steam is fed directly into the retort chamber to heat food packages without any additional heating medium (such as water used as an intermediate medium in water spray systems). The powerful fan drives the steam inside the retort to form a continuous circulation, ensuring uniform steam distribution throughout the chamber. The fan can also accelerate the heat exchange between the steam and the food packages.
During the entire sterilization cycle, the pressure inside the retort chamber is programmatically controlled by feeding compressed air into or discharging it from the retort via a high-precision steam membrane valve. Thanks to the steam-air mixed sterilization mode, the pressure inside the retort is not affected by temperature, and can be freely set according to the packaging of different products, enabling the equipment to have a wider range of applications. It is compatible with 3-piece cans, 2-piece cans, flexible packaging bags, glass bottles, plastic packages and other packaging forms.
The uniformity of temperature distribution inside the retort chamber is within ±0.3℃, with a pressure control accuracy of 0.05 Bar.
