Medium-temperature α-amylase is produced by fermentation, extraction and refinement of Bacillus subtilis and is widely used in industries such as alcohol, monosodium glutamate, beer, starch sugar, textile printing and dyeing desizing, and feed.

Application Fields
It is used in the desizing process of textiles.
In the desizing of textiles, refined liquid amylase is used as a desizing agent, which is suitable for the desizing process of silk, chemical fiber, and cotton and wool fabrics that are not resistant to high temperatures. The dosage of the enzyme is about 0.1% (4000U/g), and the reaction takes place in a water bath at 50-80℃ for 20-40 minutes.
It is used in the production of maltose and enzymatic monosodium glutamate.
In the production of maltose and enzymatic monosodium glutamate, adjust the starch slurry concentration, set the pH to 6.2-6.4, and add 0.2% calcium chloride (calculated based on the weight of the raw material). Then, add amylase to the starch slurry (6-8U/g of raw material), mix thoroughly, and heat to 70-85℃ for about 30 minutes for liquefaction.
For beer processing and production
In the production of beer, when rice and corn are used as adjuncts, they should first be ground into powder and passed through a 40-mesh or finer sieve. Then, in the gelatinization pot, the slurry is adjusted and the pH is regulated. After that, 6-8 U/g of raw material of amylase is added and the mixture is liquefied at 70-85℃ for 30 minutes.
It is used in the production of alcohol, citric acid and other food processing.
